Ingredients:
20 slices Pepperidge Farm Party Rye or Pumpernickel Bread, toasted
1/4 pound thickly sliced cooked corned beef
1/4 cup Thousand Island dressing
1 cup Valasic Sauerkraut, rinsed and drained
1 cup shredded Swiss cheese (4 ounces)
Preparation:
1. Arrange bread on 2 large microwave-safe plates lined with paper towels. Top each bread slice with small piece of corned beef, dressing, sauerdraut and Swiss cheese.
2. Microwave one plate at a time, uncovered, on HIGH 1 minute or until cheese is melted. Makes 20 appetizers.
Tip: Full-size slices of rye or pumpernickel bread can be used in place of the party rye. Cut bread into festive shape with a cookie cutter. Toast cutouts, then assemble sandwiched as directed.
Your microwave over helps you heat appetizers in minutes. Toast the bread early in the day, then assemble Mini Reubens just before heating.
